It would likely be GFE since I'd be worried about the potential for issues if there is too much vigorous activity -- which sort of is part of the PSE, eh -- in that neighborhood. I know some providers that absolutely love it, and they still charge extra. It simply takes more time to get ready for Greek. They are accounting for their time. Conversely there are providers that don't charge extra, and they don't like it. Greek adds more to the menu, sometimes attracting more diners.
