Once she tired she asked if I'd like to take over and demonstrate my technique. With the ingredients prepared, I started. I used French techniques. I alternated between 'Broyage Lent' and 'Poussee Rapide et Dure', while performing 'Levrette' technique. She seemed impressed and excited with my technique and vocalized her appreciation. After the class was over, she partook of a cupcake and provided me with refreshments. I had a great time taking her course and will definitely be returning.
