The Blue Agave is best all around. The Rio is trendy, noisy, with OK food.

I'm a fan of La Luz Mexican Grill..  also my favorite salsa made by someone other than myself... (mix the mild with the roasted...)

I usually get the fish tacos, or the atomic burrito if I'm not eating anything else that day.

Good to know granted living in a neighborhood with Mexicans spoils one who gets authentic recipes from them. ;)

Temporarily working north of Austin and I am finding some good Mexican food that is not served in Colorado...and I’m a Colorado native.

Santiagos and Viva Burrito are good, but still not Texas quality.

Perhaps you need to venture south of Denver.  Further south the better.

No problemo, I'm really really satisfied. Bit of a mess to clean. Maybe 1 hour prep time so not too bad at all. Came out...PERFECT. I enjoy cooking.

I’m getting some damn good salsa here in Austin that no restaurant in Denver has.  Wish I could find this type of salsa in Denver.

Fish, I may have to try your salsa.

4th of July BBQ at my new boss house. His wife is from Mexico and the BBQ was grilled Mexican sausage, Mexican chicken, and grilled beef strips with lots of corn and flour tortillas and some damn good homemade salsa.

We can hawk our homemade edibles?!   It's great to turn veggies into delicious salsa!

It would be nice to have the mexican food I was used to in Phoenix available somewhere in Colorado.

Consuelo's Mexican on S. Shields.  No atmosphere, but good, good food.
